gluten free chocolate cupcakes

ingredients:
- 1/2 cup cocoa powder
- 1/2 cup + 2 Tablespoons gluten-free baking flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs, room temperature
- 1/4 cup cane sugar
- 1/4 cup brown sugar
- 3 Tablespoons butter or DF option, melted
- 1/2 teaspoon vanilla extract
- 1/2 cup unsweetened almond milk
- 1 teaspoon apple cider vinegar

directions:
- Preheat oven to 350 degrees F
- Prepare muffin pan with baking cupcake liners.
- In a small bowl combine almond milk, vinegar.
- In a medium bowl, whisk together cocoa powder, flour, baking soda, baking powder, salt, sugar, brown sugar.
- Make a well. Add eggs, vanilla extract, butter, and milk/vinegar mixture. Whisk together until fully incorporated.
- Spoon 2 Tablespoons into each cupcake liner. (This works phenomenally)
- Bake 21-24 minutes until toothpick comes out clean.
- Allow to fully cool before piping on frosting.
