Christmas Red Velvet Cheesecake Brownies

INGREDIENTS
For red velvet brownies:
- ½ cup unsalted butter, room temperature
- 1 cups granulated sugar
- 2 eggs
- 1¼ cups flour
- Pinch of salt
- ¼ cup unsweetened cocoa powder
- 2 teaspoon s vanilla extract
- 2 tablespoons liquid or gel red food coloring
- ½ teaspoon white vinegar

- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 4 ounce white chocolate

INSTRUCTIONS
To make red velvet brownies:
- Preheat the oven to 350F degrees. Spray 8x8 baking pan with nonstick spray. Set aside
- In a large bowl, combine the melted butter with granulated sugar, cocoa powder, vanilla, red food coloring and salt, stirring to combine then stir in the white vinegar
- In a small bowl, whisk together the eggs and then stir them into the red velvet brownie batter
- Fold in the flour, just until combined then pour the batter into prepared baking pan
- Bake for 25-30 minutes or until a toothpick inserted in the middle comes out clean
- Allow the brownie to cool completely
To make cheesecake filling:
- Melt white chocolate and set aside to cool
- In medium bowl, mix cream cheese and powdered sugar until smooth
- In separate bowl, mix heavy cream until soft peaks form add vanilla extract and continue mixing stiff peaks form
- Add cream cheese mixture into beaten heavy cream mix on low speed just to combine
- Add melted white chocolate and mix on low speed to combine
- Spread the cheesecake filling over the brownie
- Reserve about 4 tablespoons of the cheesecake filling for the topping
To make swirl:
- Mix red food color with 2 tablespoon cheesecake filling, set aside
- Mix green food color with 2 tablespoon cheesecake filling, set aside
- Spoon the red cheesecake filling onto the cheesecake in thin rows then do the same with green
- Glide a knife through the layers creating a swirl pattern
- Chill in the refrigerate for at least 1 hours before serve
